  1. Egg     4    nos.
  2. Carrot  Finely Chopped     3    nos.
  3. Green Chillies -chopped    5    no.
  4. Onion  Finely Chopped     1    nos.
  5. Turmeric Powder     ½    tsp
  6. Grated Coconut     1    cup
  7. Oil     1    tbsp
  8. Mustard Seeds     ½    tsp
  9. Dry Red Chillies     2    nos.
  10. Curry Leaves     1    stalks
  11. Salt to taste     ½    tsp


  1. Beat the egg and keep aside.
  2. Cook the carrot along with turmeric powder and salt in little water.
  3. Heat oil in pan, add mustard seeds and red chilly and allow to splutter.
  4. Add the chopped onion, green chilly and saute well till the onion turns transparent.
  5. Add cooked carrot and saute for 3 minutes. Add the grated coconut and mix well.
  6. Add the beaten egg and scrambled it well. Stir continuously till the egg is well cooked and dried up.
  7. Add curry leaves and mix it. Serve it hot.
