Ingredients:

Description:
-
Soak rice in water for about 3 hours.
-
Decant the water from the rice and allow it to dry. It should be partially wet.

Grind into powder using mixer-grinder, sieve it to get a fine powder. Keep it aside.

Prepare syrup by boiling jaggery with water

Filter the syrup and continue boiling and stirring. (To Test: Drop a drop of jaggery syrup in a cup of water and if does not solidify, it is in the correct consistency.)

Mix cardamom powder and dry ginger powder with the jaggery syrup.

Let it cool very well and thoroughly mix it with the powdered rice so as to make a dough. Keep the dough aside for atleast an hour.

Heat oil in a heavy-bottomed vessel. Apply oil in a plastic sheet and also in your fingers. Take a small amount of dough and flatten into small discs. It should be thinner than that of vada and thicker than that of puri. A hole can be made in the center so that it cooks evenly.(Like vada)

Deep fry in the oil until it turns crispy and deep golden brown.

If they are not soft inside, you may add curd to the dough.

Keep it in paper tissues so as to absorb the extra oil and serve athirasam hot or cold.
