  1. Brinjal     ½    Kg
  2. Olive oil     3    tsp
  3. Garlic     10    cloves
  4. Ginger     1    pieces
  5. Green Chillies     6    nos.
  6. Capsicum     1    no.
  7. Onion     3    no.
  8. Lemon     1    no.
  9. Curry Leaves     2    stalks
  10. Coriander Leaves     2    stalks
  11. Soya Sauce     2    tsp
  12. Tomato Sauce     4    tsp
  13. Salt to taste     ½    tsp
  14. Spring Onion     2    stalks
  15. Celery     2    stalks
  16. Corn Flour     1    tsp
  17. Pepper Powder     1    tsp


  1. Chop the onions,garlic,ginger and green chillies in to small pieces.
  2. Cut capsicum and brinjal in to cubes.
  3. Heat olive oil in a pan,and add the chopped garlic in to it.sute it well.
  4. Now add ginger and green chillies and mix it well.
  5. Add the chopped onions,capsicum and brinjal pieces in to it.
  6. Now add all the rest of the ingredients except corn flour together with lemon juice and cover and cook 5 minutes.Do not allow to change the clour of brinjal.
  7. Now add corn flour mixed with 1/2 cup water to make curry in gravy form.(optional)
  8. Garanish the curry with coriander leaves and the curry is now ready to serve.
