  1. Lady's Finger -cut into 1 ½"length pieces    250    g
  2. Oil     3    tsp
  3. Mustard Seeds     1    tsp
  4. Fenugreek Seeds(Uluva)     ½    tsp
  5. Red Chilli Powder     1    tsp
  6. Onion -chopped    1    no.
  7. Curry Leaves     1    stalks
  8. Tomato -chopped    1    no.
  9. Salt to taste     ½    tsp
  10. Turmeric Powder     ½    tsp
  11. Masala Powder    1    tsp
  12. Tamarind     2    tbsp
  13. Water     1    cup
  14. Coriander Seeds (Malli)     1    tsp
  15. Cumin Seeds     ½    tsp
  16. Pepper     3    nos.
  17. Dry Red Chillies     2    no.
  18. Garlic     2    cloves
  19. Curry Leaves     2    stalks
  20. Onion     1    no.


  1. Cut Ladies Finger into 1 inch round pieces.
  2. Soak tamarind in water for 30 minutes and extract the juice to 1 1/2 cups.
  3. Heat in a pan, fry the grind ingredients in little oil and allow it to cool down, Grind this to a paste and keep aside.
  4. In a small pan, pour 1 tsp of oil and fry Ladies finger for 5-10 min, till you see slight golden brown color.
  5. In another pan add Oil, mustard, fenugreek and wait till the mustard splutter, add red chili, curry leaves and chopped onion.
  6. Now add the Ladies finger, Salt, ground paste, turmeric, masala powder, water and allow it to boil for 10minutes.
  7. Add the tamarind juice and taste for the salt, add if necessary. Allow it to boil for 10 minutes.
  8. Serve it hot.
