  1. Carrot -Cut into small pieces    2    cup
  2. Vinegar     ¼    cup
  3. Red Chilli Powder     2    tsp
  4. Salt to taste     ½    tsp
  5. Turmeric Powder     ½    tsp
  6. Fenugreek Powder     ½    tsp
  7. Oil     3    tbsp
  8. Ginger -chopped    1    pieces
  9. Garlic -chopped    5    cloves
  10. Mustard Seeds     ½    tsp


  1. Peal carrots and cut in to very small pieces.
  2. Add vinegar, red chilli powder, salt, turmeric powder, fenugreek powder and mix it well.
  3. Keep the mix aside for up to 12 hours.
  4. Heat oil in a pan, add mustard seeds.Allow it to splutter and garlic, ginger until it light brown.Add this to the prepared mix.
  5. Carrot pickle is ready to serve and can be used for one week.
