Ingredients: 

  1. Bhindi (Lady's Finger)     ½    Kg
  2. Tomato -chopped    2    no.
  3. Onion -chopped    2    no.
  4. Ginger Garlic Paste     1    tsp
  5. Green Chillies sliced    5    no.
  6. Chilli Powder     1    tsp
  7. Turmeric Powder     ½    tsp
  8. Coriander Powder     2    tsp
  9. Garam Masala     1    tsp
  10. Salt to taste     ½    tsp
  11. Coriander Leaves -chopped    2    stalks
  12. Oil for frying    ½    cup

Description:
 

  1. Cut bhindis to 1"long pieces. Deep fry in oil, sprinkle a dash of salt while frying keep it aside.
  2. Drain excess oil on paper napkins and set aside.
  3. Now add sliced onions and ginger and garlic and fry for 3 minutes till light brown.
  4. Add tomato, slit green chillies, red chilli powder and salt.
  5. Cook covered on low heat until tomatoes become soft.
  6. Add a little water to prevent the mixture from sticking to the pan.
  7. Add the fried bhindi and garam masala. Cook for 2 minutes.
  8. Garnish with coriander leaves.
  9. Serve it hot with roti or rice.
