  1. Cooked Rice     500    g
  2. Grated Coconut     100    g
  3. Coconut Milk     100    ml
  4. Green Chillies -chopped    10    g
  5. Mustard Seeds     ½    tsp
  6. Cumin Seeds     ¼    tsp
  7. Urad Dal(Uzhunnuparippu)     ¼    tsp
  8. Cashew Nuts     50    g
  9. Curry Leaves     2    stalks
  10. Coriander Leaves -chopped    2    stalks
  11. Lime Juice     10    ml
  12. Salt to taste     1    tsp
  13. Oil     3    tsp


  1. Heat oil in a wok,add the mustard seeds and allow to splutter.Then add the cumin seeds.
  2. Add the urad dal and when turns golden in color, add the cashew nuts and stir it well till golden in colour.
  3. Add the grated coconut,coconut milk,green chillies,lemon juice,salt,coriander leaves and curry leaves.And stir on a high flame for 2 minutes.
  4. Mix in the rice and stir for another 5 minutes on a slow flame.
  5. Coconut rice is ready.
