  1. Besan flour     750    g
  2. Rice Powder     1    cup
  3. Sugar     1    Kg
  4. Ghee     500    g
  5. Raisins (Unakka Munthiri)     50    g
  6. Cashew Nuts     50    g
  7. Green Cardamom Seeds (Elakka)     8    nos.
  8. Cloves (Kariampo)     10    nos.
  9. Saffron Powder    1    pinch
  10. Oil     1    cup
  11. Sugar Candy (Misri)     100    g
  12. Saffron     1    pieces


  1. Dissolve bengal gram flour and rice flour in sufficient water so as to get a pouring consistency.
  2. Heat oil in a pan. Prepare boondis by using special boondi plate(a plate with lot of holes) in heated oil.
  3. Crush green cardamom.
  4. Fry cashewnuts, raisins and cloves separately in ghee.
  5. Dissolve saffron in 1/2 cup of hot milk.
  6. Prepare sugar syrup.
  7. Mix together saffron powder, powdered green cardamom, cloves, cashewnuts, raisins, diamond shaped sugar candy and saffron in to the sugar syrup and stir well.
  8. Add prepared boondis in sugar syrup. Let the mixture soak for 3 hours.
  9. Roll laddus with buttered hands in round shape.
  10. Boondi laddus are ready to serve.
