Pineapple- Coconut Cake

Ingredients: 

  1. For the cake
    1. Flour      3    cups
    2. Egg      3    nos.
    3. Caster sugar      2    cup
    4. Butter      200    g
    5. Grated Lemon rind      3    tsp
    6. Grated Coconut      1    cup
    7. Pineapple  Juice    1    cup
    8. Baking Powder      1    tsp
  2. For the pineapple icing
    1. Butter      50    g
    2. Icing Sugar      1    cup
    3. Pineapple  Juice    ½    cup

Description:
 

  1. Beat the butter, rind and sugar until light. Beat in the eggs, one at a time.
  2. Stir in the coconut and mix well. Mix the flour with the baking powder. Add the flour and pineapple juice, alternately to the egg mixture and mix thoroughly.
  3. Pour this mixture in to a greased tin and bake at 160°C for an hour in a preheated oven. Turn onto a rack to cool.
  4. For the pineapple frosting, mix the butter and icing sugar in a bowl.
  5. Slowly pour in the pineapple juice and keep stirring until a paste is formed.Spread this over the cold cake.
