  1. Milk     4    tsp
  2. Almonds     200    g
  3. Maida     2    cups
  4. Ghee     1    cup
  5. Kesari Powder     1    pinch
  6. Pachai karpooram     1    pinch
  7. Sugar     1    cup


  1. Soak almonds in boiling water for about an hour.
  2. Blanche them and wash clean. Grind it to a very fine paste, sprinkling a little water.
  3. Fry maida flour light brown i8n 1/4 cup of ghee.
  4. Take a heavy bottomed saucepan. Put 1 cup of water.
  5. Add sugar and bring to boil. Add milk and remove dirt from the syrup.
  6. when the syrup is ready add almond paste and go on stirring.
  7. When it boils, add kesari powder mixed in water.
  8. If you want the cake to be white, do not add kesari powder.
  9. When the almond paste mixes well with the sugar syrup and thickens, it will froth.
  10. Remove from fire. Add the fried maida and ghee little by little and go on stirring with a flat ladle for about fifteen minutes till it thickens.
  11. Add powdered cardamom and pachaikarpooram. Mix well.
  12. Spread it on a plate greased with ghee evenly with a plantain leaf and cut in to pieces of desired shape.
  13. Remove the pieces separately after the cake has cooled.
