  1. Cashew Nuts     350    g
  2. Sugar     4½    cups
  3. Cardamom Seeds (Elakka)     8    nos.
  4. Ghee     1    cup
  5. Milk     2    tbsp


  1. Heat ghee in a frying pan, moderately over a slow fire.
  2. Take a handful of cashewnuts, and fry in ghee to a golden brown.
  3. Do not allow the cashewnuts to become reddish.After frying all the nuts like this, little by little, depending on the volume of ghee in the pan, drain off the ghee completely.
  4. Allow it to cool thoroughly. Prepare syrup with sugar, and proceed as for 'Sugar Nokkal'. Remove from fire.
  5. Add cardamom powder. Add fried cashewnuts and mix well.
  6. Allow the syrup to harden and mix with the cashewnuts.
  7. When the mixture becomes milky white, spread it over a tray. Allow it to cool.
  8. Remove sugar that falls out. Keep the 'Nokkal' tinned.
