Ingredients: 

  1. Idly Cut in to small pieces    8    nos.
  2. Maida     4    tbsp
  3. Corn Flour     2    tbsp
  4. Ginger-garlic-green chilli paste     2    tsp
  5. Warm Water     ½    cup
  6. Salt to taste    ½    tsp
  7. For Sauce
    1. Spring Onion  finely chopped    ¼    cup
    2. Capsicum  Finely sliced    ½    cup
    3. Minced Garlic      1½    tbsp
    4. Minced Ginger      ½    tsp
    5. Finely Chopped Green Chillies      2    tsp
    6. Red Chilli Powder      ½    tsp
    7. Soya Sauce      1    tsp
    8. Chilly Sauce      ½    tbsp
    9. Vinegar      2    tsp
    10. Tomato Sauce      2    tbsp
    11. Oil      2    tbsp
    12. Brown sugar      1    tsp
    13. Salt  to taste    ½    tsp
    14. Finely Chopped Coriander Leaves      2    tbsp

Description:
 

  1. Heat oil for deep frying in a heavy bottomed vessel.
  2. In a bowl, combine maida, cornflour, salt, ginger-garlic-green chilli paste and water to make a thick paste.
  3. Dip the idli pieces in to the batter such that its well coated.Place each piece that is well coated with the batter in to the hot oil.
  4. Do not crowd the vessel. Reduce flame and deep fry till it turns lightly brown.
  5. Increase the flame towards the end of the cooking process and fry till it turns golden brown. Remove on to absorbent paper and keep aside.
  6. Heat oil in a pan, add the chopped garlic and stir fry for a new seconds.
  7. Add the green chillis and ginger and stir fry on high for a few seconds. Add the whites of spring onions and stir fry on high for 3-4 mts, constantly tossing them.
  8. Add the sliced capsicum and stir fry for another 3 mts. They should retain their crunch.
  9. Reduce to medium heat and add the brown sugar, soya sauce, tomato ketchup, chillisauce and vinegar. Combine well and cook for 2 minutes.
  10. Add 4-5 tbsps of water and cook for few minutes.
  11. Add the deep fried idli pieces and combine. Toss on high flasme for 1-2 mts. Turn off heat.
  12. Garnish with the chopped spring onion greens or coriander leaves.
  13. Serve it hot.
