  1. For Dough
    1. Wheat Flour (Atta)      1    cup
    2. Salt to taste      2    pinch
    3. Water      ¼    cup
  2. For Masala Filling
    1. Boiled and mashed Potato      1    cup
    2. Onion  -chopped    ½    cup
    3. Green Chillies  sliced    1    tbsp
    4. Ginger  -chopped    1    tsp
    5. Turmeric Powder      ½    tsp
    6. Mustard Seeds      1    tsp
    7. Salt to taste      ½    tsp
    8. Lime Juice      1    tsp
    9. Coriander Leaves  -chopped    2    stalks
    10. Oil      1½    tbsp
  3. Ghee     3    tbsp


  1. Mix the salt into the wheatflour and slowly add the water and knead, making a soft dough.
  2. Cover with a damp cloth and keep aside for 2 hours.
  3. Heat oil in a pan,allow to splutter mustard seeds,then add onion fry till soft.
  4. Add green chillies,ginger and turmeric powder.Stir it well.
  5. Mix the mashed potatoes,lemon juice,coriander leaves and salt.Remove it from fire.Potato masala is ready.
  6. Divide the dough into 10 portions and roll each one into a round ball.
  7. Dip a flattened ball into the dry flour and coat it on all sides.
  8. Using a rolling pin, roll out each ball into a round shape and place potato masala filling in side.
  9. Fold it and press the edges.
  10. Heat ghee in a dosa pan and cook both sides well.
  11. Serve it hot.
