Description:

Wash and soak the rice in water
-
Melt ghee in a pan, add sliced onion and saute till golden brown. Set aside.

In the remaining ghee add cardamom seeds,cinnamon pieces and cloves. When it starts to splutter add basmati rice and fry it.

Add salt and boiled water twice as the amount of rice and cook the rice in boiled water.

Clean the ayala fish by cutting its head and tail. Cook the fish by adding turmeric powder,salt and sufficient water. Remove the bone from the fish and set aside.

Heat a non stick pan, add ghee when it melts add chopped onion and saute till golden brown. Then add cooked ayala fish and saute well till the water dries up.

Grease a vessel with ghee, then spread some cooked rice . Garnish with coriander leaves, mint leaves and fried onion.

Then make a second layer of ayala fish mix. Again make another layer of rice on the top of it. Repeat the steps with the remaining rice and fish mix. Cover the vessel with a lid and cook for 15 minutes.

Top it with fried cashew nuts,raisins and onion and serve hot
