Ingredients: 

  1. Basmati Rice     3    cups
  2. Ghee     ¼    cup
  3. Cashew Nuts     10    g
  4. Raisins (Unakka Munthiri)     10    g
  5. Onion sliced    1    no.
  6. Cinnamon Pieces (Patta)     1    piece
  7. Cloves (Kariampo)     6    nos.
  8. Cardamom Seeds (Elakka)     6    nos.
  9. Salt to taste     ½    tsp
  10. For Masala
    1. Ayala (Mackerel)      8    nos.
    2. Ghee      4    tbsp
    3. Onion   Finely Chopped     4    nos.
    4. Ginger  Crushed    1    piece
    5. Garlic  Crushed    12    cloves
    6. Green Chillies  Crushed    7    nos.
    7. Tomato  -chopped    2    nos.
    8. Chilli Powder      1    tbsp
    9. Turmeric Powder      ½    tsp
    10. Fenugreek leaves (dried kasuri methi)   Powder    1    tsp
    11. Garam Masala      1    tsp
    12. Mint Leaves(Pudina)   Finely Chopped     ¼    cup
    13. Coriander Leaves   Finely Chopped     ¼    cup
    14. Salt to taste      ½    tsp
    15. Mint Leaves(Pudina)  -chopped    1    tbsp

Description:
 

  1. Wash and soak the rice in water
  2. Melt ghee in a pan, add sliced onion and saute till golden brown. Set aside.
  3. In the remaining ghee add cardamom seeds,cinnamon pieces and cloves. When it starts to splutter add basmati rice and fry it.
  4. Add salt and boiled water twice as the amount of rice and cook the rice in boiled water.
  5. Clean the ayala fish by cutting its head and tail. Cook the fish by adding turmeric powder,salt and sufficient water. Remove the bone from the fish and set aside.
  6. Heat a non stick pan, add ghee when it melts add chopped onion and saute till golden brown. Then add cooked ayala fish and saute well till the water dries up.
  7. Grease a vessel with ghee, then spread some cooked rice . Garnish with coriander leaves, mint leaves and fried onion.
  8. Then make a second layer of ayala fish mix. Again make another layer of rice on the top of it. Repeat the steps with the remaining rice and fish mix. Cover the vessel with a lid and cook for 15 minutes.
  9. Top it with fried cashew nuts,raisins and onion and serve hot
