  1. Toor Dal     1    cup
  2. Small Onion / Shallot -chopped    1½    cup
  3. Tomato Cut in to pieces    3    no.
  4. Potato     1    no.
  5. Green Chillies     3    nos.
  6. Garlic     2    no.
  7. Brinjal     300    g
  8. Tamarind Juice Lemon size    1    no.
  9. Asafoetida Powder    ¼    tsp
  10. Fenugreek Powder     ½    tsp
  11. Grated Coconut     1    cup
  12. Red Chilli Powder     1    tsp
  13. Coriander Powder     1    tbsp
  14. Mustard Seeds     1    tsp
  15. Cumin Seeds     ¼    tsp
  16. Black gram dal     1    tsp
  17. Dry Red Chillies     3    nos.
  18. Curry Leaves     2    stalks
  19. Coriander Leaves     2    stalks
  20. Salt to taste     ½    tsp


  1. Pressure cook toor dal with pinch of turmeric powder and curry leaves.
  2. Extract tamarind juice by soaking it in warm water.
  3. Heat oil in a pan, fry shallots followed by potato, tomatoes, green chillies, garlic and brinjal, stir thoroughly and close the pan. Cook for 10 minutes after adding salt.
  4. Mix the vegetable with cooked dal and bring to boil for 5 minutes, add tamarind juice, salt as needed, Asafoetida powder and Fenugreek seeds powder. Keep the flame in medium.
  5. Meanwhile roast grated coconut with curry leaves till it become brown. Keep the flame in medium, add red chilli powder, coriander powder a grind this to fine paste.
  6. Finally add the coconut mixture, boil it in low flame till the gravy thickens.
  7. Heat oil in a pan, splutter mustard seeds, then add cumin seeds, black gram, dry red chillies and curry leaves. Pour it to the sambar,mix well.
  8. Add fresh coriander leaves.
