  1. Toor Dal     1    cup
  2. Turmeric Powder     ½    tsp
  3. Garlic     1    cup
  4. Small Onion / Shallot     1    cup
  5. Tomato     3    no.
  6. Green Chillies     3    no.
  7. Red Chilli Powder     1    tsp
  8. Coriander Powder     1    tbsp
  9. Tamarind Juice Lemon size    1    no.
  10. Asafoetida Powder    ¼    tsp
  11. Fenugreek Seeds(Uluva) Powder    ¼    tsp
  12. Salt to taste     ½    tsp
  13. Mustard Seeds     ½    tsp
  14. Urad Dal(Uzhunnuparippu)     ½    tsp
  15. Small Onion / Shallot     3    no.
  16. Cumin Seeds     ¼    tsp
  17. Dry Red Chillies     3    no.
  18. Curry Leaves     2    stalks
  19. Coconut Oil     2    tbsp
  20. Coriander Leaves     2    stalks


  1. Pressure cook toor dal with pinch of turmeric powder and curry leaves.
  2. Soak tamarind in warm water and extract juice from it.
  3. Heat oil in a pan, add chopped shallots, garlic and green chillies. Fry for few minutes. Then add chopped tomato, close the pan and allow it to cook till the tomatoes are soft.
  4. Then add chilli powder, coriander powder and stir for few minutes in medium flame.
  5. Mix it with cooked dal. Add salt and water, stir well and let it boil.
  6. Add tamarind juice, a pinch Asafoetida powder and Fenugreek seeds powder. Keep it in low flame till the gravy thickens.
  7. Heat oil in a pan, splutter mustard seeds, and then add shallots saute till onion turns light brown.
  8. Add cumin seeds, urad dal, dry red chillies and curry leaves. Pour it to the Sambar.
  9. Garnish with chopped coriander leaves.
