  1. Toor Dal     1    cup
  2. Oil     2    tbsp
  3. Mustard Seeds     ½    tsp
  4. Cumin Seeds     ½    tsp
  5. Asafoetida     ½    tsp
  6. Curry Leaves     2    stalks
  7. Onion     2    no.
  8. Tomato     3    no.
  9. Green Chillies     3    nos.
  10. Carrot Cut in to pieces    2    nos.
  11. Lady's Finger     5    nos.
  12. Beans -chopped    1    cup
  13. Tamarind Juice Lemon size    1    no.
  14. Sambar Powder (available in market)     1    tbsp
  15. Jaggery(Sarkkara) Cubed    1    nos.
  16. Salt to taste     ½    tsp
  17. For Preparing Idli
    1. Rice      1½    cups
    2. Urad Dal(Uzhunnuparippu)      ¾    cup
    3. Baking soda      1    pinch
    4. Salt to taste      ½    tsp


  1. Pressure cook the dal with 2 cups water.
  2. In a pan heat oil, add mustard seeds. When they splutter add cumin seeds. Then add asafoetida powder and curry leaves.
  3. Cut onion straight. Now fry it. Once they turn golden brown, add chopped tomato and fry.
  4. Then add all chopped vegetables. Add sufficient water and let it boil for 10-15 minutes.
  5. Now mix the dal and sambar powder. Stir properly.
  6. Mix tamarind paste and jaggery and let it boil for 15 minutes. Add salt to taste.
  7. Garnish with chopped coriander leaves.
  8. Serve hot with idli.
  9. Soak rice and urad dal for 6-8 hrs. Mix and grind coarsely.
  10. Add soda and leave it for 4-6 hrs for fermentation. Add salt and mix properly into the form of batter.
  11. Grease the idli holder or tray and fill each of them with required quantity of idli batter.
  12. Let it get steamed for 20 mintues in low flame. Do not open the cooker immediately,
  13. Open after some time. Carefully take off the idlies from the tray and serve hot with sambar.
