Ingredients: 

  1. Basmati Rice     2    cup
  2. Coconut Milk     2    cup
  3. Ginger -chopped    1    tsp
  4. Garlic     1    tsp
  5. Soaked Green Beans     ¼    cup
  6. Beans -chopped    ¼    cup
  7. Carrot -chopped    1    nos.
  8. Tomato     2    no.
  9. Cauliflower florets     1    cup
  10. Onion -sliced    2    no.
  11. Bay leaves     2    nos.
  12. Cinnamon Pieces (Patta)     1    pieces
  13. Cardamom Seeds (Elakka)     2    nos.
  14. Cloves (Kariampo)     2    nos.
  15. Mint Leaves(Pudina)     2    stalks
  16. Green Chillies -chopped    3    nos.
  17. Turmeric Powder     ½    tsp
  18. Coriander Leaves -chopped    2    stalks
  19. Salt to taste     ½    tsp
  20. Fennel Seeds(Perumjeerakam)     ½    tsp
  21. Ghee     2    tbsp

Description:
 

  1. Soak rice in water for half an hour. Drain the water and keep aside.
  2. Heat ghee in the cooker, add bay leaves, cardamom, cloves, cinnamon fennel seeds. After 2 minutes.
  3. Add ginger, garlic and green chillies and stir fry for a minutes. Now add onions fry till golden brown.
  4. Add tomato and fry till they turn mushy. Add turmeric powder coriander powder, coriander leaves and mint leaves.
  5. Then add all the vegetables and saute for few minutes.
  6. Mix cooked rice with the vegetables and stir fry few minutes.
  7. Add coconut milk, salt and 1.5 cup water and mix well.
  8. Close the pressure cooker with lid and cook for one whistle on medium flame till the is cooked.
  9. Garnish with coriander leaves. Serve hot with raitha.
