  1. Maida     2    cup
  2. Onion     2    no.
  3. Ginger -chopped    1    pieces
  4. Green Chillies -chopped    5    nos.
  5. Curry Leaves -chopped    1    stalks
  6. Baking soda     ¼    tsp
  7. Salt to taste     ½    tsp
  8. Water     ½    cups
  9. Oil for frying    1    cup


  1. Add 1/4 tsp of yeast in quarter glass of luke warm water and mix well. keep this aside for about 10 minutes.
  2. After 10 minutes add all purpose flour chopped green chilly , ginger 1 tsp of oil curry leaves, onion, salt and yeast mix into a bowl mix well.
  3. Add enough water to make a dough. It need to be bit watery than chappathi mix. Pour 2 tbsp of oil on top of the dough.
  4. Tightly close the bowl and keep aside the dough for minimum 2 hours.Then again mix well.
  5. Now divide the dough into small balls. Apply oil or water to the palm of your hands and shape dough into the shape of uzhunnu vada.
  6. Heat oil ina kadai deep fry the vada in hot oil. When it become golden brown and crisp remove from the oil and drain
  7. Serve with chutney or tomato sauce.
