Brinjal Masala

Ingredients: 

  1. Brinjal     2    nos.
  2. Mustard Seeds     ½    tsp
  3. Cumin Seeds     ½    tsp
  4. Onion  Finely Chopped     2    nos.
  5. Ginger Garlic Paste     1    tsp
  6. Green Chillies -chopped    3    nos.
  7. Turmeric Powder     ¼    tsp
  8. Coriander Powder     2    tsp
  9. Chilli Powder     1    tsp
  10. Tomatoes  Finely Chopped     2    nos.
  11. Salt to taste     ½    tsp
  12. Water     1    cup
  13. Oil     3    tbsp

Description:
 

  1. Cut brinjal into thick rounds, now cut each rounds into strips.
  2. Heat oil for shallow frying . Drop brinjal in and fry till golden. Remove and set aside.
  3. Now drain most of the oil from the pan, keep just 2 tbsp in it. Add mustard and cumin . Iet them pop.
  4. Add in onions, green chillies and sute till golden.
  5. Add in ginger garlic paste and saute for a minute.
  6. Add in salt and chilli powder, turmeric powder, coriander powder and mix well.
  7. Now add in tomatoes and cook for couple of minuts, add in a splash of water and cook till tomatoes turn mushy.
  8. Now add in another splash of water and when it starts to bubble, add in fried brinjal and mix. Simmer for 5 minuts.
  9. Serve it hot.
