Vegetable Payasam

Ingredients: 

  1. Potato     2    nos.
  2. Carrot     2    nos.
  3. Almonds     20    nos.
  4. Cashew Nuts     ½    cup
  5. Coconut pieces     ¼    cup
  6. Milk     1    litre
  7. Jaggery(Sarkkara)     1½    cup
  8. Cardamom(Elakka) Powder     ¼    tsp
  9. Condensed Milk     1    cups
  10. Ghee     2    tbsp
  11. Water     1    cup

Description:
 

  1. Peel out the skin of potatoes and carrots and wash well under water.
  2. Cut in to small pieces. Cook the vegetables and grind into paste.
  3. Soak the almonds and 10 cashew nuts in hot water for 5 minutes. Remove the almonds and grind with the cashew nuts and keep aside.
  4. Heat ghee in a flat bottomed pan, roast the remaining cashew nuts and add coconut pieces and keep aside.
  5. Boil the jaggery in a little water and strain to remove impurities.
  6. To the same ghee, add strained jaggery, almonds, cashew nut paste and vegetable paste and stir it continuously.
  7. Add the milk and condensed milk. When the mix begins to boil, remove from the flame.
  8. Sprinkle the cardamom powder and mix well. Garnish with roasted cashew nuts and coconut pieces.
  9. Tasty vegetable payasam is ready. Serve it warm or chilled.
