White Chana and Vegetable Ularthiyathu

  1. White Channa     1    cup
  2. Water     1    cup
  3. Carrot     1    nos.
  4. Beans     1    cup
  5. Potato     2    nos.
  6. Onion     1    nos.
  7. Padavalanga     1    cup
  8. Turmeric Powder     ¼    tsp
  9. Coconut Oil     2    tbsp
  10. Mustard Seeds     1    tsp
  11. Curry Leaves     1    stalks
  12. Small Onion / Shallot Thinly sliced    10    nos.
  13. Dry Red Chillies     2    nos.
  14. Grated Coconut     2    cup
  15. Pepper Powder     ½    tsp
  16. Coriander Powder     1    tsp
  17. Garam Masala Powder    1    tsp
  18. Chilli Powder     1    tsp
  19. Salt to taste     ½    tsp


  1. Pressure cook the soaked chana with enough water for 1- 2 whistles or until done open after pressure releases.
  2. Add the chopped vegetable, turmeric powder and little salt to the pressure cooker.
  3. Close with the lid and pressure cook for 1 whistles. Open after pressure releases. Drain excess water and set side.
  4. While the vegetable are cooking , heat 1 tbsp oil in a pan. Splutter mustard seeds and fry dry red chillies and curry leaves. Add sliced small onion and fry until golden.
  5. Next add grated coconut and stir fry continuously until it turns golden brown. Now bring down the heat to low and add chilly powder, pepper powder, coriander powder and masala powder mix well and cook until their raw smell is gone.
  6. Finally add the pressure cooked vegetable and mix well. Stir fry everything for 2 minutes.
  7. Serve this delicious white chana and vegetable ularthiyathu is ready. Serve it hot.
