  1. For Rice
    1. Basmati Rice      1    Kg
    2. Cardamom Seeds (Elakka)      6    nos.
    3. Cinnamon Pieces (Patta)      3    pieces
    4. Cloves (Kariampo)      5    nos.
    5. Peppercorns      1    tsp
    6. Ghee      3    tbsp
    7. Lime Juice      1    tbsp
    8. Pudina Leaves  -chopped    1    tbsp
    9. Coriander Leaves  -chopped    1    tbsp
    10. Pineapple  Essence    1    tsp
    11. Cooked Green Peas      2    tbsp
  2. For Gravy
    1. Chicken  -Cleaned and cut into medium pieces    1    Kg
    2. Onion  -sliced    3    nos.
    3. Green Chillies      5    nos.
    4. Tomatoes  -sliced    2    nos.
    5. Ginger Garlic Paste      2    tbsp
    6. Chilli Powder      2    tsp
    7. Turmeric Powder      1    tsp
    8. Coriander Powder      2    tsp
    9. Pepper Powder      1    tsp
    10. Masala      2    tsp
    11. Oil      3    tbsp
  3. To Garnish
    1. Roasted Onion  -chopped    1    no.
    2. Roasted Cashew Nuts      10    g
    3. Roasted Raisins (Unakka Munthiri)      10    g


  1. Soak the biriyani rice in water for half an hour.Drain it.
  2. Heat ghee in a cooker and fry the rice for 10 minutes and keep aside.
  3. In the same cooker add the cardamom seeds,cinnamon pieces,peppercorns and cloves.Stir fry for 3 minutes.
  4. Then add green peas,coriander leaves and pudina leaves.Stir it and add 10 glass water.Let it boil.
  5. Add fried rice,salt,yellow colour,pineapple essence and lemon juice.Stir it well.Cover and cook till done.
  6. For gravy,marinate the chicken pieces with 1 tsp chilly powder, 1/2 tsp turmeric powder and salt.Keep aside for 30 minutes.
  7. Heat oil in a pan,add onion,green chillies and tomatoes.Stir fry till oil separate.
  8. Then add remaining chilly powder,turmeric powder,pepper powder,coriander powder and masala.Stir for 3 minutes.
  9. Add marinated chicken pieces and mix it well. The add 1 cup of water.Cover and cook till done.
  10. Layer the serving bowl with alternating layer of rice and chicken masala.
  11. Garnish with roasted onions,cashew nuts and raisins.
  12. Serve it hot with best combination.
