Easy Cardamom Cake

  1. Maida     1    cup
  2. Baking Powder     2½    tsp
  3. Sugar     1    cup
  4. Egg     3    nos.
  5. Cardamom Seeds (Elakka)     6    no.
  6. Vanilla Essence     ½    tsp
  7. Lemon Juice     ½    tsp
  8. Milk     ½    cup
  9. Oil     ½    cup
  10. Cashew Nuts     10    g
  11. Raisins (Unakka Munthiri)     10    g
  12. Almonds Slices    ¼    cup


  1. Sift all purpose flour and baking powder and set aside. Preheat oven to 350 F.
  2. Line a 9 inch round cake pan with parchment paper or grease it and then dust with flour.
  3. Set aside in a blender grind sugar and eggs for about 30 seconds until frothy. Add in cardamom, nutmeg powder and grind again for about 20 seconds until cardmom is crushed.
  4. Transfer this to a large bowl. Next add oil, milk, vanilla essence and lemon juice. Whisk well or use a spatula to mix everything. Now add sifted all purpose flour and baking powder little by little and mix well to combine.
  5. Finally stir in the nuts and raisins. Pour this batter into the prepared 9 inch cake pan. Sprinkle sliced almonds.
  6. Bake for about 25 minutes. Or until done and a skewer inserted in to the center comes clean.
  7. Take it out , run a knife along the edges and invert onto a plate after 8 minute. Cool and cut into pieces. Store left overs in the fridge.
  8. Its delicious, yet very simple and easy to make.
