  1. Basmati Rice     2    cups
  2. Chicken Sausage -chopped    10    nos.
  3. Onion sliced    2    nos.
  4. Green Chillies Slices    3    nos.
  5. Ginger Garlic Paste     2    tsp
  6. Tomato -chopped    2    nos.
  7. Cinnamon Pieces (Patta)     1    pieces
  8. Fennel Seeds(Perumjeerakam)     ½    tsp
  9. Cardamom Seeds (Elakka)     3    nos.
  10. Cloves (Kariampo)     3    nos.
  11. Bay leaves     1    no.
  12. Star Anise     1    nos.
  13. Chilli Powder     2    tsp
  14. Turmeric Powder     ¼    tsp
  15. Coriander Powder     1    tbsp
  16. Masala Powder    1    tsp
  17. Coriander Leaves -chopped    3    stalks
  18. Salt to taste     ½    tsp
  19. Mint Leaves(Pudina) -chopped    2    tbsp
  20. Oil     2    tbsp


  1. Wash and soak rice for 30 minutes.
  2. Heat oil in a pressure cooker. Add in all the whole spices and let them sizzle.
  3. Now add in onions, green chillies, salt and saute this till golden.Now add in ginger garlic paste and cook for a minute.
  4. Now add in tomatoes and cook till mushy. Add in chicken sausage and cook that for 5 minutes.
  5. Now add in all the spice powders and salt and mix well. Add coriander and mint leaves and mix well.
  6. Add in drained rice and mix well. Add water and mix well. Cover and simmer for 15 minutes. Now let the pressure go by it self.Open the cooker and fluff the rice.
  7. Chicken sausage biriyani is ready. Serve it hot.
