Vermicelli Rice

Ingredients: 

  1. Basmati Rice     2    cups
  2. Roasted Vermicelli     1    cup
  3. Onion -chopped    2    no.
  4. Cinnamon Pieces (Patta)     2    pieces
  5. Cloves (Kariampo)     3    nos.
  6. Cardamom Seeds (Elakka)     2    no.
  7. Bay leaves     2    no.
  8. Lemon Juice     1    tsp
  9. Ghee     4    tbsp
  10. Salt to taste     ½    tsp
  11. For Garnishing
    1. Raisins (Unakka Munthiri)      10    g
    2. Cashew Nuts      10    g
    3. Onion  sliced    2    nos.

Description:
 

  1. Heat ghee in a pan and fry garnished portion of onions cashew nuts and raisins. Keep aside.
  2. Fry all spices and chopped onions.When the onions become golden add drained rice and vermicelli. Fry for about 4 minutes.
  3. Add 3 cups of water, lemon juice and salt. Cook till the water is dried completely and rice is cooked .
  4. Garnish with fried onions, cashew nuts and raisins.
