Soya Chunks Stew

Ingredients: 

  1. Soya chunks     3    cups
  2. Potato     4    nos.
  3. Onion Slices    2    nos.
  4. Cooked Peas     1    cups
  5. Cinnamon Pieces (Patta)     1    pieces
  6. Cardamom Seeds (Elakka)     3    nos.
  7. Cloves (Kariampo)     4    nos.
  8. Star Anise     1    nos.
  9. Bay leaves     1    nos.
  10. Garlic -sliced    10    cloves
  11. Green Chillies sliced    5    nos.
  12. Curry Leaves     2    stalks
  13. Ginger Slices    1    pieces
  14. Pepper Powder     ½    tsp
  15. Garam Masala Powder    1    tsp
  16. To Fry
    1. Onion      1    nos.
    2. Cashew Nuts      10    g
  17. Salt to taste     ½    tsp
  18. Oil     2    tbsp

Description:
 

  1. Heat water in pot. When it comes to boil, add the soya chunks. Cook for 5-6 minutes.
  2. Drain and some cold water. When it cools , squeeze the soya chunks so that it does not have any water in it.
  3. In a pan heat some oil add cashews. Fry little till it browns a little. Remove to a bowl. In the same oil,add sliced onion.
  4. Saute till it is nicely browned . keep it along with the cashews . In the same pan, add the cinnamon, cardamom, clove , star anise and bay leaf.
  5. When it sizzles, add sliced onion. Saute till it starts to brown. Add slice d garlic, ginger, green chilli and curry leaves. Saute till the onions brown a little.
  6. Peal and cube the potatoes. Add to the pan, saute till it is almost cooked . Add the drained soya chunks saute till it all roasted a little.
  7. Add along with potatoes and let it cook completely. Add steamed peas. Mix well. also add the pepper powder, garam masala and salt.
  8. Take part of the coconut milk . mix with 1 cup of water and add to the pan. Close and cook in low medium heat till all the veggies are cooked and everything comes together.
  9. Finally add the rest of the coconut milk and cook in low flame for 5 minutes. Serve it hot.
