Cauliflower Tomato Ularthiyathu

Ingredients: 

  1. Cauliflower Cut in to small pieces    2    cups
  2. Onion Thinly sliced    2    nos.
  3. Green Chillies     3    nos.
  4. Tomato     2    no.
  5. Curry Leaves     1    stalks
  6. Pepper Powder     1    pinch
  7. Salt to taste     ½    tsp
  8. Coconut Oil     2    tbsp

Description:
 

  1. Heat coconut oil in kadai over medium high heat. Add onion, little salt and sauté until transparent.
  2. Add cauliflower florets, salt, green chillies, curry leaves and tomato pieces. mix well. cook covered for a few minutes.
  3. Tasts check for salt. Open and cook until dry about 4-5 minutes. Add a pinch of pepper powder.
  4. Mix well and switch off. Do not over- cook. It tastes best when the cauliflower is a bit crunchy. Keep covered for 5 – 10 minutes.
  5. Serve warm with rice.
