Cauliflower Curd Rice

  1. Cauliflower     1    nos.
  2. Yoghurt     1    cups
  3. Oil     2    tsp
  4. Mustard Seeds     ½    tsp
  5. Curry Leaves     1    stalks
  6. Urad Dal(Uzhunnuparippu)     ½    tsp
  7. Cashew Nuts     10    g
  8. Green Chillies     2    nos.
  9. Carrot  Finely Chopped     4    tbsp
  10. Cucumber  Finely Chopped     3    tbsp
  11. Salt to taste     ½    tsp


  1. Wash and cut the cauliflower into florets. Use a food processor or grater to rice the cauliflower.
  2. Boil for a few minutes in enough water and drain well or stir fry for 5 minutes adding salt until done set aside until it cools down.
  3. Add yoghurt and mix well taste check for salt. In a small pan, heat oil over medium heat.
  4. Splutter mustard seeds and fry curry leaves, urad dal and cashews. Stir until golden. Add green chilly chopped carrot and green bell pepper.
  5. Cook a minute add this to the cooked cauliflower and yoghurt mix. Finally add cucumber pieces mix well.
  6. Serve with papadam and pickle.
