Caramel Semiya Payasam

  1. Roasted Semiya     1    cup
  2. Sugar     ½    cup
  3. Milk     3    cups
  4. Cardamom(Elakka) Powder     ¼    tsp
  5. Ghee     2    tbsp
  6. Roasted Cashew Nuts     10    g
  7. Roasted Raisins (Unakka Munthiri)     10    g
  8. To Caramelize
    1. Sugar      2    tbsp
    2. Water      ¼    cup


  1. Heat kadai and add sugar. Sugar will start to turn browning i.e,caramelizing. Simmer the flame and add water. Remove as soon as possible. Cool it.
  2. In another kadai, add milk and and bring it to nearly 1 1/4 cups. Add semiya and make it to boil. Add sugar, cardamom powder and caramelized sugar.
  3. Now fry all the nuts in ghee and add it to the payasam
  4. Serve it cold.
