  1. Milk     2½    cups
  2. Sugar     150    g
  3. Vanilla Essence     3    drops
  4. Milk Powder (Optional)    2    tbsp
  5. For Caramel
    1. Sugar      3    tbsp
    2. Water      1    tsp


  1. Boil the milk till 1/2 quantity by adding sugar.Let the milk cool.
  2. Beat the egg well.
  3. Then add beaten egg to the milk.Stir it well.
  4. Add the milk powder and essence.Mix it well.
  5. For caramelizing,heat sugar with 1 tsp of water in a pan till it melts and turns golden brown.
  6. Pour this caramelised sugar into the pudding mould and swirl to coat the sides of the mould. Keep aside to cool.
  7. Pour the milk mixture in to mould.
  8. Steam cook for 40-45 minutes on low flame.
  9. Turn the heat off, let puddings stay in the steamer.Cool the pudding and then chill in the refrigerator for an hour or two.
  10. To serve, place a plate over the mould hold firmly in place and turn over gently. The pudding will turn over onto the plate, caramel side up.
