Chicken Badam Roll

  1. Chicken breasts-cut into cubes    250    g
  2. For dusting the chicken
    1. Red Chilli Powder      ½    tsp
    2. Garam Masala      ½    tsp
  3. For the stuffing
    1. Oil      1    tbsp
    2. Onion  -chopped fine    1    no.
    3. Almonds  - peeled and sliced     10    nos.
    4. Green Chillies  deseeded and sliced     2    nos.
    5. Red Chilli Powder      ½    tsp
    6. Garam Masala      ½    tsp
    7. Oil  for frying    1    tbsp
    1. Oil      4    tbsp
    2. Cardamom Seeds (Elakka)  -lightly crushed with skins     5    nos.
    3. Large Onion      3    nos.
    4. Garlic      12    cloves
    5. Ginger  -chopped    2½    cm
    6. Khus khus (Poppy Seeds)  Powder    1    tsp
    7. Turmeric Powder      ½    tsp
    8. Coriander Powder      2    tsp
    9. White Pepper Powder      ½    tsp
    10. Garam Masala      ½    tsp
    11. Curd  -beaten well     ½    cup
    12. Saffron  -diluted in warm water    1    pinch


  1. To prepare the rolls, flatten the chicken pieces with a kitchen hammer.
  2. Mix the dusting ingredients together and coat the chicken pieces well. Keep the pieces aside until required.
  3. For the stuffing, fry the onions until transparent and stir in the remaining stuffing ingredients.
  4. Put one tsp of the stuffing into each chicken piece and make into a roll. Secure each roll with a toothpick or tie with thread.
  5. Heat some oil in a frying pan, cook the rolls on a high heat for about 5-7 minutes or until light brown.
  6. For the gravy, make a paste of the onion, garlic and the ginger.
  7. Heat oil in a pan, add the cardamoms and when they start spluttering add the onion paste and fry until golden brown.
  8. Add Khus khus Powder,turmeric Powder, coriander powder, salt,white pepper powder.Stir it well.
  9. Gradually add the beaten curd and 1 cup of water, simmer for 2-3 minutes.
  10. Add the chicken rolls to the gravy, simmer and cook on a low flame for 15-20 minutes, or until cooked.
  11. Remove the toothpick/thread before serving. Serve sprinkled with diluted saffron and garam masala.
