Chicken Reshmi Biryani

  1. Chicken -Cleaned and cut into medium pieces    1    Kg
  2. Onion sliced    2    nos.
  3. Oil for frying    1    cup
  4. Ginger Garlic Paste     2    tbsp
  5. Garam Masala     ½    tsp
  6. Chilli Powder     2    tsp
  7. Coriander Powder     1    tbsp
  8. Turmeric Powder     ¼    tsp
  9. Coriander Leaves -chopped    1    cup
  10. Curd     1    cup
  11. For Rice
    1. Basmati Rice      2    cup
    2. Oil      2    tbsp
    3. Cloves (Kariampo)      6    nos.
    4. Cardamom Seeds (Elakka)      6    nos.
    5. Saffron      ¼    tsp
    6. Water      4    cups


  1. Marinate the chicken in ginger-garlic paste, chilli powder, garam masala,corriander powder,turmeric powder,curd and salt. Keep aside for 1 hour.
  2. Heat oil in a kadai and fry the onions in it till brown and crisp. Drain out the oil from the onions and keep aside.
  3. Heat oil again in another pan and add the cloves and cardamoms in it.
  4. When slightly dark add the rice and turn around to mix well.
  5. Cook rice in water with salt.
  6. Heat oil in a kadai, fry the marinated chicken and cook it well.
  7. Arrange alternate layers of chicken and rice. Sprinkle saffron dissolved in water and coriander leaves.
