  1. Grated Carrot     1    cup
  2. Grated Coconut     1    cup
  3. Sugar     1    cup
  4. Ghee     1    tsp
  5. Cardamom(Elakka) Powder     3    pinch
  6. Cashew Nuts     8    nos.
  7. Raisins (Unakka Munthiri)     8    nos.


  1. Heat ghee in a pan and fry the cashew nuts and raisins until they turn golden and keep it aside.
  2. In the same pan add sugar and little water and stir until the sugar is dissolved.
  3. when the sugar dissolves, add coconut,carrot and keep stirring until the mixture starts leaving the sides of the pan.
  4. Add cardamom powder and mix well.
  5. Coat a tray with some ghee and pour the kesari in the tray,spread two teaspoons of ghee and press surface down firmly.
  6. Garnish with roasted nuts and raisins.Cool and cut into squares or diamond pieces.
  7. Coconut Carrot Burfi is ready to serve.
