Ginger Pickle

  1. Ginger grated    ½    Kg
  2. Green Chillies -chopped fine    5    nos.
  3. Chilli Powder     2    tbsp
  4. Turmeric Powder     ½    tsp
  5. Jaggery(Sarkkara)     1    piece
  6. Thick Tamarind Juice    1    cup
  7. Coconut Oil     6    tbsp
  8. Salt to taste     1    tsp
  9. For Seasoning
    1. Mustard Seeds      2    tsp
    2. Dry Red Chillies      3    nos.
    3. Curry Leaves      2    stalks


  1. Clean the ginger and grate finely.
  2. Heat 1 tbsp oil in a pan and fry the ginger and green chillies till brown.
  3. Take another wok and heat remaining oil,add mustard seeds and splutter along with dry red chillies and curry leaves.
  4. Pour tamarind juice and add chilli powder and turmeric powder.Mix it well. Let it boil on low fire.
  5. Add fried ginger and boil it for 5 more minutes.Add jaggery powder and let it simmer for 5 more minutes.
  6. Remove from the fire and let it cool. Keep it in a fresh bottle.
